Hey everyone, for my first blog post since July, I am going to be sharing a food allergy friendly place that I discovered this summer: Fusian Sushi. The idea of the restaurant is to create custom sushi bowls or rolls, which I might add, are OUTSTANDING and allergy friendly. I reached out to Steven from Fusian, and he provided a considerable amount of information on their allergy precautions and policies, which I was excited to hear about. Like any other restaurant, they cannot guarantee that their food will have zero cross contamination, so please keep that in mind.
For those of you that are avoiding gluten, eggs, or dairy, the online menu denotes gluten free or vegan items which you can access here.
Dietary Considerations Sheet
Fusian also has a dietary considerations sheet that the restaurants have on hand; this sheet includes the food options and the allergens they contain. Access the guide here.
Cross Contamination Precautions
Prepping: When teams prep food (veggies, proteins, sauces), they all have clean hands and wear gloves, while being careful not to come in contact with any other foods.
Out on the Line: The employees never use their hands when selecting proteins (they use tongs instead), they try to reduce the risk of food coming in contact with each other, and frequently clean the line with sanitizer and a towel.
When coming in with a specific restriction, the team member will change their gloves, grab a fresh bamboo mat, and hand cut your roll (as opposed to putting it through the machine). All of the employees are also trained to know which foods might affect certain allergies, so if you're unsure about something, just ask!
